How can I simply log out of the signed iCloud account with Memotoo so that i may use another ? I do not want to delete anything I just do not want to use the specific account. I do not want to delete the data being its on 2 way sync and I need that information on other devices.

You must just click again on "Authorize Memotoo to access my iCloud" to add an anotther iCloud account:
